Watermelon Popsicles

Nothing says summer more than sweet and juicy watermelon, and these fun and refreshing watermelon popsicles are the perfect sweet treat for when you need to cool down during the summer heat wave! …ohh and don’t get intimidated by the layers because this effect is super easy to achieve.

Makes 10 popsicles

Ingredients
4 cups watermelon, rind removed and chopped
1/2 cup raspberries
3 tablespoons lime juice, divided
4 tablespoons sugar, divided
1/3 cup coconut milk (from a can)
1 kiwi fruit, peeled and chopped
1/4 cup mint leaves

Instructions
1. Add watermelon, berries, 2 tablespoons of lime juice, and 3 tablespoons sugar to a high powered blender. Blend until fruit is liquified and sugar has dissolved. Fill popsicle molds 3/4 of the way up with watermelon mixture. Place in the freezer for 1 hour to freeze a little before adding the coconut layer.

2. Carefully pour coconut milk on top of the watermelon layer. Place in freezer for at least 1 hour to freeze a little before adding kiwi layer.

3. Add kiwi, mint, 1 tablespoon of lime juice and 1 tablespoon sugar to a high powered blender. Blend until fruit is liquified and sugar has dissolved. Fill popsicle molds with kiwi mixture. Insert popsicle sticks and freezer for at least six hours.
