Nothing says “summer” like sweet and juicy watermelon, don’t you agree? I think that this fun and refreshing popsicle recipe is the perfect treat for cooling down in a heat wave! Also, these homemade watermelon popsicles are only 70 calories each. So now we have a guilt free sweet treat on our hands 😃!
Art imitates life? (or something like that …)
I decided to show my love of watermelon with a little creativity. After a short “inspo” session on Pinterest I had an idea. What if I made a watermelon popsicle that looks like a slice of watermelon?
Color Me Beautiful
First, our watermelon popsicle needs “flesh”. For this, I tried a blend of watermelon and lime juice – but this just isn’t pink enough. It turns out that some sweet, juicy raspberries put the pink POP in these popsicles I was looking for, without pushing up the carbs.
Next, the popsicles need a white layer to represent the inside of the watermelon rind. It turns out that this is nice and easy! The answer is a little coconut milk- but be selective with your coconut milk. You want the thickest, creamiest stuff, or else your DIY popsicles won’t be tasty. So pass on the thinner coconut “beverages” and buy yourself canned coconut milk!
Finally, we need to represent that beautiful green skin. I know that mint tastes great with watermelon, but this popsicle needs something else … and what else but kiwi? This is another tasty addition that also keeps to the low carb spirit of this dessert.
Layer it Up!
Now you need to practice a little patience to get the layers right. That’s not exactly my strong point, so if I can do it, so can you! I’ve explained how to achieve this effect in the recipe below. That’s the hardest part – the rest is just freezer time!

Watermelon Popsicles with Mint and Coconut
Colorful DIY popsicles with watermelon, mint and coconut that are delicious, yet low in carbs. The perfect way to cool off under the summer sun!
- Prep Time: 10 minutes
- Total Time: 8 hours, 10 minutes
- Yield: 10 Watermelon Popsicles with Mint & Coconut 1x
- 4 cups seedless watermelon, rind removed
- 1/2 cup raspberries
- 3 tablespoons organic cane sugar
- 2 tablespoons freshly squeezed lime juice
1/3 cup coconut milk (from a can)
- 1/4 cup fresh mint leaves
- 1 kiwi, peeled
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon organic cane sugar
- Add all ‘watermelon layer’ ingredients into a high powdered blender. Blend until fruit is liquified and sugar has dissolved. Fill 10 popsicle molds 3/4 way of the way up with watermelon mixture. Place in the freezer for 1 hour to freeze a little before adding the coconut layer.
- Carefully pour coconut milk on top of the watermelon layer. Return to the freezer for another 1 hour to freeze a little before adding the mint layer.
- Add mint, kiwi, lime juice and cane sugar to a high powered blender. Blend until ingredients have become liquified. Fill popsicle molds with mint mixture. Insert wooden sticks and freeze for at least six hours. Enjoy!
